Vegetables in Season February

 In Food, Vegetables

We love nothing more at Nutted Out Nutrition to hear people wanting to include more fresh foods in their diets, however we understand that for some there can be the challenge of price of some of these foods.

So we have decided to re-introduce ‘Fruits and Vegetables’ in Season on our website to help give you ideas and info on how you can include more of these delicious foods while also not going overboard with the budget.

Remember, fruits and vegetables in season are usually cheaper, whether it be at your local supermarket, vegetable and fruit shop or local farmers market.

So lets look at some vegetables in season for February

  • Asparagus
  • Beans
  • Beetroot
  • Broccoli
  • Capsicum
  • Carrot
  • Celery
  • Cucumber
  • Eggplant
  • Lettuce
  • Mushrooms
  • Snowpeas
  • Zucchini

How many of these vegetables can be used to make a delicious salad or be grilled on the BBQ! Perfect for summer!

Here are some ideas:

  • Eggplant, large mushrooms, zucchini and asparagus are great vegetables to be grilled on a bbq. So next time you have a bbq you can sprinkle these veegtables with small amount of oil and your favourite herbs and spices and grill them! Simple and delicious!
  • Snowpeas and green beans can make a great snack- cut the ends off and have a small handful with some of your favourite dip such as hummus and you or the kids have a great afternoon snack.
  • Talking about snacks, the humble celery and peanut butter combination still packs a punch with the taste buds! Again try it for a snack!
  • Mushrooms are great cooked or raw- such a versatile vegetable! Throw into salads, pasta and rice dishes or grill them on hamburgers.

Check out this Thai Beef Salad (courtesy of weightloss.com.au)- it uses many of the vegetables in season and is perfect for a warm summer evening. Hey you could even throw some mushrooms in!
