While we are coming to the end of the warmer months, it doesn’t mean our love of salads has to come to an end as well. We are also coming to the end of the Easter break, and a time when many people include delicious seafood as part of their diet.  And so we continue on with our ‘Salads of the World’ collection and keep with the seafood theme for this time of year.

Here is a seafood salad that is a favourite of our dietitian, Konsita and her family, who make it regularly.

Seafood is a source of omega 3’s which have been associated with a range of health benefits, and research suggests receiving omega 3 from foods such as seafoods may be most beneficial.

The simple flavourings also help make this salad not too heavy with dressing; the flavours compliment the flavours of the seafood and vegetable.

And don’t be shy with the vegetables, if you have other vegetables you love then throw those in as well!

Serves 1-2

Ingredients

  • 1 cup chopped celery
  • 1 cup grated carrots
  • ½ a small onion, chopped
  • 80g crab meat
  • 100g cooked prawns
  • 2 tablespoon mayonnaise
  • black pepper
  • 1 tablespoon lemon

Method:

  1. Mix celery, carrots, onion, crab meat and prawn
  2. Add mayonnaise, stir until all ingredients are evenly coated.
  3. Season with black pepper and lemon.
